This Entry's Thoughts: Life is a lot of mediocrity. A recent trip to Frankenmuth Michigan made me realize that the really good things can come and go. A favorite restaurant no longer serves their bread & butter pickles. I missed those. Enjoy things while you got them. Sometimes, we have to learn to make things ourselves instead of relying on others to provide the good things in life. Spend more time chasing the best things in life. Seize opportunities as they come along.
Tastings: I tried 1 bottle of my Festbier in 3 weeks as I couldn't wait much longer. Forgot to compensate with a very small batch and the yeast bite was fairly high. This first bottle was acidic. I took it 4 weeks before trying the next 2 bottles. One of the bottles had still too much yeast. The other bottle, however, had a strong Tripel ale taste. I'm not much for making Tripel ales, but Saflager S-23 Dry Lager Yeast is appears to be meant making Tripels.
New Ideas & Improvements: Going to try to compare 2 German yeasts on 1 batch and it should narrow this Paulaner Wiesn clone down faster. Always lager for minimum 4 weeks.
